Mushrooms: the taste of fall!

Mushrooms? 
Although we eat mushrooms as vegetables, they are actually fruits of a fungus. Edible mushrooms are delicious, but some species you absolutely cannot and should not eat; watching out for poisonous mushrooms is the message!
The most edible mushroom is the white mushroom. So the mushroom is a type of mushroom. It is grown all year round in a lot of countries.

Mushrooms consist of 95% water and contain very few calories
Yet they are packed with healthy substances: minerals such as potassium and phosphorus, vitamins B2 and K, folic acid ... They also contain slightly more protein than vegetables.

The bigger the mushroom, the more flavor
So when in doubt, it is best to choose the big one.

Rather brush than wash
Mushrooms are like little sponges that soak up water. Therefore, brush them (or use kitchen paper) as much as possible to prevent your preparation from becoming too watery. With some species such as morels, you have no choice but to wash them because sand often remains in the folds.

Keep them nice and white
You do this by sprinkling them with a little lemon juice after cutting them.
Mushrooms give off more flavor if you tear them instead of slicing them
Tearing doesn't destroy the fine texture, making them even tastier.

Cut a piece from the stem
To avoid hard and dried out bits in your meal, it is best to cut a slice off the stem.

Don't eat too many raw mushrooms
Raw mushrooms naturally contain the toxin agaritin, a substance that is thought to be carcinogenic in mice, and in large quantities therefore also in humans. A few slices of raw mushrooms in your salad will do no harm, but heating the mushrooms will partially break down the agaritine.

Golden rule when frying
Let the pan get really hot! That way the water won't run out too much and they won't get too dry. Also, don't use too much oil or butter, because they completely soak up that, too. After frying, season with salt and pepper.

Mushrooms can be used in many dishes: pasta with mushrooms (a delicious veggie dish!), stuffed mushrooms, with risotto, in quiches, in stews, in tortillas, on toast ...
