Have you ever made a no waste soup?
It's the season of delicious vegetables: celeriac, peppers, leeks, kohlrabi, red cabbage, French beans, fennel, radish, courgette, cauliflower, pumpkin ... Enough choice to enjoy a different vegetable every day.
Have you ever looked at your kitchen counter after cleaning vegetables: a leftover here and there, from a lost carrot to a piece of onion, half a courgette, broccoli stems, cauliflower leaves ... And where do they end up? Indeed, usually in the bin.
But did you know that the outer vegetable leaves contain the most vitamins and flavour, ideal for a strong soup. It's a shame to let all these flavour bombs end up in the bin!
Freezer bag
Store all the leftovers in a freezer bag. You can store this power food in the freezer for a long time. Whenever you have vegetable waste left over, put it in a bag, after cleaning the evegtable thoroughly.
On a chilly or wet autumn evening you can process that 'vegetable waste' into a delicious soup!
